Bloated & Hungry

Thirty days of plant-base eating have past and learned a lot in those few days. The first two weeks were the worst. No one can prepare you for the amount of gas and pooping. A lot went down. Drinking diluted apple cider vinegar helped with the bloating, because your body is getting use to the increased fiber in your diet. I would dilute 1 tbsp. of organic unfiltered, raw apple cider vinegar in a 32oz mug with ice. Make sure the vinegar includes “the mother.” The concoction is pretty tart, so I sipped on it throughout the day. You can dilute the apple cider vinegar in a 4 to 8oz glass and get it over with, just don’t drink it straight. It will eat up your esophagus. After drinking that on day 3, I felt much better. Actually, I felt better than usual.

On top of feeling lighter and less bloated, since the complete diet change, I eat more. I ❤ FOOD. Ended up purchasing a large tote so I can always have snacks and water. Do not like to feel hungry or thirsty! Growing up in a family thinking about the next meal while eating the current has prepared me for this. Keeping food with long shelf lives are essential if you have a busy lifestyle. Having a few servings of nuts (almonds, pistachios, or walnuts), packets of flavored nut butter, and a banana in my bag is a life saver. Also learned how to make quick meals/snack when I am starving. Recently, visited family and learned quickly that meat, dairy, or honey is in almost everything eaten on a daily bases. Here are two things that I found that is quick and delicious (sorry no pics, eating was the priority):

Two ingredient cookie snack: Smash 2 ripe bananas and 1 cup of old fashion oats. Bake for 15 minute at 350°F. I had to be a little fancy and added 1/4 cup each of vegan chocolate chips and dried cranberries with a few shakes of cinnamon. Technically its a 5 ingredient cookie, but the add-ins are up to you. Makes about 16 tablespoon sized cookies.

Quick throw together sandwich: Add a sliced avocado, tomatoes, cilantro, and vegan BBQ sauce on a everything bun – BOOM. It is a given, if there is an avocado,  lime juice and Tajin is all over it. Throw some chips with it and you have a meal.

Not only is plant-base eating a diet change, it’s most certainly a lifestyle change. The simplifying of your diet is easily transferred to the simplifying of surroundings. It almost goes hand in hand with minimalist living. A domino effect, if you will. Doing away with extras in my diet, house, and life is so cleansing. There is more time to do all the things I want to do, more space is opening up in my house with less stuff, and making fewer decisions about things that do not really matter to me. Less stressed out to sum it up, plus I can taste food better now. I read somewhere that once dairy is eliminated from your diet, the light film on your tongue goes away (eww) and flavors become more intense. Craving a whole head of cabbage or a bundle of carrots is a regular occurrence. Just loving simplicity.
